After getting a haircut on Sunday, I had a craving for tonkotsu ramen, so I stopped by the flagship “Ippudo” store in Daimyo.
Speaking of Ippudo, it’s now a major brand known across Japan and even internationally, with numerous branches both in Japan and abroad.
This flagship store in Daimyo is their headquarters.
The quality of the table tea is impressive.
What a surprise! Inside the pods placed on the table, there’s not water but tea, and that tea is unbelievably delicious. I was wondering what kind of tea it was, and then I found an explanation. It’s “Rooibos tea,” they say.
In addition, you can have unlimited refills for free.
Ordered the “Hakata Tonkotsu Ramen”.
I ordered the regular “Hakata Tonkotsu Ramen”. It costs 850 yen including tax. I actually wanted to order the “Great Value Set”, but it turned out to be available only on weekdays.

I chose the “firm” texture for the noodles. For the first bowl, I went with “firm” noodles, and for the refill, I prefer them to be “extra firm.”
The broth has a moderate richness, and the flavor of tonkotsu is well infused into it.
The slices of chashu pork, green onions, wood ear mushrooms, boiled egg, and seaweed maintain an outstanding balance, creating an exceptional harmony in the Tonkotsu ramen. Among all the Tonkotsu ramen I’ve had before, this ranks at the top. Being the flagship store, it’s possible that the best talents are gathered here, resulting in such remarkable flavor.
If you haven’t tried authentic Tonkotsu ramen in Fukuoka yet, I highly recommend starting with the Tonkotsu ramen at “Ippudo Daimyo Main Store.” It’s an experience you won’t want to miss!
