I visited the Ganso Ramen Nagahama-ke located in the Nagahama area, and I would like to introduce it to you!
“Ganso Ramen Nagahama-ke” is a famous restaurant known for its tonkotsu ramen. It is said to have originated from “Ganso Nagahama-ya” also located in Nagahama. Fukuoka has various types of tonkotsu ramen, including Hakata Ramen, Nagahama Ramen, and Kurume Ramen, and Ganso Ramen Nagahamake specializes in serving Nagahama Ramen, as the name suggests.
“Ganso Ramen Nagahamake” is known as a popular local eatery, and one of its attractions is its affordable prices. You can enjoy authentic tonkotsu ramen at a reasonable price of 500 yen per bowl! Another great aspect is that it’s open 24 hours, which is very convenient.
The interior ambiance
When you enter the restaurant, you will be immediately asked about the firmness of the noodles by the staff. This is because the menu only offers ramen, so it is automatically assumed that you have ordered ramen upon entering. The only other options available are “kaedama” (extra noodles for 100 yen) and “kaeniku” (extra meat for 100 yen), which indicate refills.
Let the staff know your preference for noodle firmness, such as “kata” (firm), “futsuu” (regular), or “yawa” (soft). I personally ordered mine “kata.” The regular customers were ordering with the phrase “beta, nama, negi-mori!” which means “extra fat, very firm noodles, and extra green onion on top!”. I’ll give it a try next time!

How to Order at ‘Ganso Nagahama-ya’ and ‘Ganso Nagahama-ke’
Looking around, the interior of the restaurant, with around 40 seats, was almost fully occupied. It was bustling with many people.
The tonkotsu ramen has arrived.
The tonkotsu ramen was brought to the table in less than a minute after placing the order!
On the table, there are red pickled ginger, sesame seeds, black pepper, and a special sauce for ramen, so let’s add them to the ramen! Locals often like to add red pickled ginger and sesame seeds.

The soup is pork-based and has a light flavor. The noodles are quite substantial. Nagahama Ramen originally had a taste that was easy to eat even in the morning, as it was eaten by people working at the fish market.
I had ordered extra noodles and extra meat, but after finishing my first bowl, I regretted it a little. One bowl alone is enough!
