Are you familiar with Fukuoka’s ‘Nagahama Ramen’ in Japan? Originating from the Nagahama area of Fukuoka, it’s a type of tonkotsu ramen known for its affordable price and relatively light flavor compared to other tonkotsu ramen. It has been a beloved soul food among the citizens of Fukuoka for many years, and it’s a taste I’ve known and cherished since my childhood.

‘Ganso Ramen Nagahama-ke,’ commonly known as ‘Ke-Ichi’.

Further branching out, there is another
‘Ganso Ramen Nagahama-ke’ with the same name, commonly known as ‘Ie-Ni,’ currently operating in Nakasu.

This time, I will explain the unique ordering methods of these three shops. However, the names of these three shops are quite similar and can be a bit confusing. To organize, they are as follows:

How to Order

Now, let’s get to the main topic. The ordering process at Ganso Nagahama-ya and Ramen Nagahama-ke is quite unique and tailored for regular customers.It’s advisable for beginners to do some preparation before visiting.Let me give you a brief overview.

At Ganso and Ie2, first purchase a meal ticket from the vending machine at the entrance, then take a seat inside. Only Ke1 follows the traditional cash-on-delivery system, so there is no vending machine. Simply sit at the seat you’re guided to.

As soon as you enter, the staff will ask about your preferred noodle firmness. Here’s a tip: you can actually customize it for free based on your response. Many regulars order with their preferred customizations. Below are some common combinations:

※ For example, “Betanama” means extra oil with raw noodles,“Betanama Neginashi” means extra oil with raw noodles without green onions, and“Nashikata Negi Oome” means no oil with firm noodles and extra green onions.Please give them a try!

③ Once the ramen is served, add the red pickled ginger, the additional broth-like sauce, and other condiments on the table to your ramen according to your preference. Be cautious not to put too much of the additional sauce, as it might become too intense in flavor.

When ordering a “kaedama” (extra noodles), at Ganso, you can either buy a ticket from the vending machine or pay cash directly at the table. At Ke 1, since it’s a post-pay system, you’ll pay for the extra noodles together with your total bill at the end. For Ie 2, you can only order extra noodles through the vending machine ticket system. To specify the firmness of the extra noodles, simply communicate your preferred firmness as shown below, no matter which store you’re in.
