Located in Chiyo, Hakata-ku, Fukuoka City, ‘Shodai ZERO-Shiki’ is a ramen shop that opened its doors on October 4, 2022. It stands out from traditional Hakata ramen with its innovative approach, offering a new style of Hakata ramen known as the ‘Original Hakata Tonkotsu.’
In conclusion, it was fantastic. I’ve visited several times. One notable feature of the shop is the concept of ‘ramen that pairs well with rice.’ Their commitment to achieving harmony between ramen and rice is evident, as they do not adopt a system for extra noodle servings.

The soup is a shoyu tonkotsu (soy sauce pork bone) base, and the noodles are a custom-order medium-thick curly noodle from the Hakata Seimensho noodle factory. The medium-thick curly noodles may remind you of ‘Yokohama-style ramen.’ The combination of this soup and noodle works well, creating a ‘Hakata-style’ ramen that is distinct from the Yokohama-style. Truly, it’s an innovative original ramen!
The menu primarily features three ramen variations: ‘Shiro’ (white) Tonkotsu Shoyu Ramen, ‘Kuro’ (black) Tonkotsu Shoyu Ramen (with horse oil), and ‘Aka’ (red) Tonkotsu Shoyu Ramen (with spicy miso sauce). Additionally, there are the ingredient-rich ‘Tokushiki,’ limited-quantity ‘Tsukemen,’ and the traditional ‘Hakata Tonkotsu Ramen.’
Surprisingly, during lunchtime, if you order both ramen and rice, you can enjoy unlimited rice refills. However, it’s important to note that they do not have an ‘extra noodle’ system.
I tried it.
I had the ‘Shiro’ on my first visit and the ‘Kuro’ on my second. Both paired well with the medium-thick curly noodles and were incredibly delicious. It’s becoming addictive. They complement rice nicely, making it easy to enjoy. I’m thinking of trying the ‘Aka’ on my next visit!
